The Ultimate Ginataang Santol

My Mama cooked ginataang santol just this Saturday because there were orders. :) Of course we also left some for ourselves coz it's also our favorite. Just a little bit of it goes a long way, you know why? because I can have a plate of rice with just 3 spoonful of this dish.


I know you are wondering, what's special about this dish. Why do we like it? Oh well, personally because it's my Mama who cooked it. :)

This dish consist of minced cotton fruit (known as santol) cooked in coconut cream with garlic, onion and meat or tinapa (some people use pork meat but my Mama uses smoked mackerel fish called tinapa). It is always best to add chili to make it spicy and make sure to add a dash of salt to taste. The cooking process takes a bit of time as you need to constantly mix it to avoid the bottom part getting burnt, let it simmer then add a heavy coconut cream and let it simmer again until the oil comes out. This is best paired with freshly cooked rice. I'm pretty sure when you try this you'll end up eating more rice. :)




What is Santol (Cotton Fruit)


Santol is a tropical fruit widely cultivated in Southeast Asia like the Philippines. You have to peel it and then you can eat the flesh but don't eat the seeds. :O Most of it are somewhat sour and sometimes sweet, it depends whether it's ripe or not; and also from its variety. Some people will just peel it and sprinkle sugar on it before eating while others will dip the peeled fruit in water with salt as if washing it before eating. I also hear that some makes a pickled santol but we haven't tried it. Now you know what santol is. :) Have you ever seen one or tasted one?
